
Ingredients:
2 cups almond or coconut milk, at room temperature
2 tablespoons honey
⅓ cup chia seeds
2 teaspoons vanilla extract
Pinch of cinnamon
Pinch of salt
Granola, honey, and fresh fruit for topping (optional)
Instructions:
In a bowl, whisk together almond milk and honey until the honey is fully dissolved and incorporated.
Add chia seeds, vanilla extract, cinnamon, and salt to the mixture, and whisk well.
Allow the mixture to sit for 5 minutes, then whisk again until smooth.
Cover and transfer the bowl to the refrigerator. Let it chill for at least 4 hours or overnight.
Serve the chia pudding topped with fresh fruit and granola, if desired.
