
Ingredients:
8 oz halibut, diced
1 jalapeño, seeds removed and minced
½ cup fresh lime juice
2 tablespoons red onion, finely chopped
¼ cup cilantro, roughly chopped
½ teaspoon salt
1 avocado, diced
¼ cup tomato, seeds removed and diced
Tortilla chips, for serving
Instructions:
In a large bowl, combine the diced halibut, minced jalapeño, lime juice, salt, red onion, and cilantro. Stir gently to mix.
Cover and refrigerate for at least 2 hours, allowing the fish to "cook" in the lime juice.
Just before serving, gently fold in the diced avocado and tomato.
Serve chilled with tortilla chips.
